Thai spiced sweet potato soup

This deliciously warming soup with it's Thai spicing is a great, simple soup to make and enjoy after the festivities are over. It's the perfect antidote to all that richer, more indulgent food over the festive period.

Keep it warm in a flask and enjoy while your out walking away those Christmas cobwebs!

4 medium/large sweet potatoe (approx. 750g)

2 stalks of lemongrass

1 inch piece of fresh ginger

1 clove garlic

Handful of fresh coriander

1 litre chicken stock

½ cup cashew nuts (+ extra to garnish)

Salt/cracked pepper

1 lime

Roughly chop the sweet potato and place into a large pot. Take the lemongrass and trim the bottom and top of the stalk, then remove the outer layer. Finely chop and add to the pot.


Chop the ginger and garlic and add to the pot along with the fresh coriander, chicken stock and ½ cup cashew nuts. Simmer until cooked through.


Blend well and season as needed. Add juice of 1 lime just before serving and mix well.

Garnish with roasted cashew nuts.

 

Enjoy.
