These pretty Christmas Cookies are greatly giftable and moreishly nibbleable! With fruit, chocolate and nuts they are stuffed full of great ingredients. Why not make a batch, wrap them in brown paper and gift them to your favourite people, or keep them in a tin at home to whisk out whenever guests come calling?


2 cups ground almond

¼ cup tapioca flour

½ tsp baking powder

Zest of an orange

1/3 cup pistachios

1/3 cup cranberries

¼ cup chocolate chips/pieces

60g melted coconut oil

¼ cup maple syrup

 

 

Place all the ingredients except the coconut oil and maple syrup in a large bowl. Mix together well.

Add in the coconut oil and maple syrup and stir well until you have a cookie dough.


Roll into balls, or scoop (I have used an ice cream scoop) and place onto a non-stick mat or baking paper lined tray. Gently flatten a little.

Bake at 160 C for 20 minutes.
