Okay so the sunshine seems to be here at last, just in time for the school summer holidays and these mini magnums are going to become your favourite thing to cool down with! 

P.S these are way healthier than a real magnum but we bet that you'll love them even more as they taste ace.

Ice Cream


1/3 cup cashew nuts (soaked for 2 hours beforehand)

1/2 cup thick vanilla coconut yogurt

1 tsp Manuka Honey (you could use a little more if you like it sweet, or sub Maple Syrup or Chicory syrup)

Squeeze of lemon juice


Chocolate


Mix together, 

60g melted coconut oil

20g cacao powder

20g of maple syrup or chicory root syrup (I used half and half)

Place all the ice cream ingredients in a blender, except the lemon juice, and blend until smooth.


Squeeze in lemon juice as desired and mix well.


Pour/scoop into ice cream moulds and place into the freezer (overnight is best, but 3/4 hours should do).


Once frozen dip into your chocolate and then dip straight into your favourite chopped nuts if you love them like we do!


Enjoy in the sunshine.
