A super one for a half term activity from the fabulous Claudine at Healthy Family Food Ideas Claudine is a prolific recipe creator and also tests recipes for Ottelenghi amongst other things. Her recipes are always easy to follow and often solve a problem like these super jelly sweets that a great replacement for store bought ones.

Claudine says...ever made healthy sweets? It couldn’t be simpler! My kids adore them! But they have no added sugar! You can make any flavour by setting any liquid! Coconut water, herbal tea, kefir, juice, vanilla milk, coconut milk, hot chocolate etc!

6tbsp of grass-fed gelatin powder (or use vegeset)

200ml water

2 tbsp raw honey,

260ml freshly squeezed lemon juice (I have also done them with half lemon half tangerine juice and they are amazing)

120ml kefir water (or just normal water or coconut water)

Sprinkle 6tbsp of grass-fed gelatin powder, 200ml water in a saucepan. Leave for a few minutes to swell (this is called blooming) then heat for a few minutes until dissolved.  Add to a jug along with 2 tbsp raw honey, 260ml freshly squeezed lemon juice (I have also done them with half lemon half tangerine juice and they are amazing), 120ml kefir water (or just normal water or coconut water).

Stir well and pour into silicone moulds.


Chill for a few hours in the fridge before serving.
