This vibrant, high-fibre Asian inspired coleslaw is packed with crunchy vegetables, pumpkin seeds, and a tangy peanut dressing bursting with ginger and lime. Serve it alongside crispy fish burgers topped with kimchi and avocado for a family meal that tastes indulgent but keeps your gut happy and blood sugar balanced.

The creamy peanut butter dressing (made with coconut aminos, fresh ginger, and lime juice) brings all the flavour without any compromise. Raw cabbage, carrots, celery, and pumpkin seeds deliver serious fibre and nutrition. Naturally gluten-free - this is the kind of colourful, delicious food worth making as the weather warms up.

  • 1/4 red cabbage
  • 2 large carrots (or 3 medium)
  • 1 large stalk of celery
  • 1/3 cup pumpkin seeds

For the dressing:

  • 1/3 cup crunchy or smooth peanut butter (or a mix)
  • 1 Tbsp coconut aminos
  • 1 Tbsp extra virgin olive oil
  • 1 tsp finely grated ginger
  • Juice of 1 lime
  • 1 heaped tsp raw honey (optional)

Grate the carrots and place in a large bowl. Thinly slice the red cabbage and finely chop it, then add to the bowl with the carrots. Finely chop the celery and add to the mix. Stir in the pumpkin seeds and toss everything together well.


In a small bowl, mix all the dressing ingredients together well. Pour over the vegetables and toss through until everything is coated.


Enjoy alongside Burgers or Sweet Potatoe Wedges for a colourful, delicious meal.
