Cinnamon Choc Dipped Valentines Cookies

Fancy knocking up something that literally says, 'I love you' for Valentine's Day? These Cookies are a great way to show you care and make someone feel really special. You've probably got all these ingredients in your kitchen cupboards too, so what are you waiting for?

2 cups ground almond

3 tbsp coconut flour

1 tsp baking powder

2 tsp ground cinnamon

1 tsp five spice

 

70g coconut oil

1/3 cup maple syrup

 

50-100g melted dark chocolate (I used an 95%, but anything 70% and above would be suitable).

Preheat oven to 150C

 

In a large bowl mix together the dry ingredients.

Add to the dry ingredients soft coconut oil and your maple syrup. Mix well, use your fingertips if needed to mix into a dough.

 

Press on a non-stick mat and use your cookie cutters to cut into desired shapes.

 

Bake on a non-stick mat or baking paper lined tray for 15-18 mins until edges are firming up.

 

Remove and allow to cool before dipping into your melted chocolate.

 

Store in a air tight container (you can store in the fridge to keep chocolate hard if the room temperature is warm).
