With the school holidays nearly upon us our Chocolate Crispy Cakes are a quick, simple treat that the kids can make with you. A great alternative to the ultra processed alternatives these little chocolatey treats can be enjoyed anytime -  playdate, post school, bake sale or on your Christmas adventures!

2 cups rice puffs

1 cup fine desiccated coconut

1/3 cup cranberries

1/3 cup pumpkin seeds

100g coconut oil (melted)

50g cacao powder

50 g maple syrup

 

Mix in a large bowl the coconut oil and cacao powder, whisk together. Add in the maple syrup and mix well.


Add to the bowl the puffed rice, coconut, cranberries and pumpkin seeds. Mix well.

 

Press into muffin cases or into a lined small slice tin. Store in the freezer or fridge.

 

Festive version – decorate with goji berries and pistachios.

 

Gluten and dairy free. No refined sugar.
