It's the time for many of us when we slow the world down a little and our waffle recipe are a lovely way to kick off a lazy day. At our shoot we loved popping some blueberries and raspberries in as a little Christmas Tree decoration that the smallest of the Nourish team loved! Whip up a pile of these to enjoy with all the trimmings.

1 cup almond flour

1/3 cup coconut flour

1 tsp baking powder

5 large eggs

1 cup coconut kefir

½ tsp vanilla paste (or essence)

1 tbsp maple syrup (opt)

Mix together the almond flour and coconut flour. Add in the eggs, kefir and vanilla along with maple syrup if using. Beat well. Set to the side for 5-10 minutes

Heat up the waffle maker. Spoon over your mix.

Note - This mix will be a lighter colour than some other flour waffle mixes when made.

Serve with coconut yoghurt and fresh berries. If desired drizzle with a little maple syrup and almond butter.

Enjoy

 

These can be made in advance and frozen, I place baking sheets between them so they don’t stick together.
