Ingredients
Base
1 packet vanilla bites (40g)
50g your favourite nut (I used macadamias)
1 Tbsp almond butter
Filling
100g macadamia nuts (soaked for 15-30 minutes)
100g thick coconut yoghurt (I used the plain coyo one, you could also use the vanilla variety)
100g coconut kefir (I used the plain coyo one)
100g blackberries (mine were frozen, but you can use fresh as well)
60g (4 Tbsp) manuka honey (or honey of your choice, or replace with chicory syrup or maple syrup)
60 g melted coconut oil or cacao butter (or a mixture)
Good squeeze of lemon juice (2-3tsp)
Method
Base
Blitz the bites and nuts in a food processor until finely chopped. Add in the almond butter and continue to process until it holds when pressed together.
Press the base into four ramekins, or glass moulds.
Filling
Drain the nuts and place in a high speed blender along with the yoghurt, kefir, honey and blackberries. Blend well until almost smooth. Add in the melted coconut oil and blend until smooth. Finally add in the lemon juice, blend well (add in a little more if needed).
Pour into your ramekins or glass dishes.
To decorate
Fresh or freeze dried berries
Chocolate (I use a peeler and peel 85-92% dark chocolate to create little chocolate ribbons on the top)
Store in the fridge for up to 3 days.
Helpful Hint – Grape tree often have macadamias available at a cheaper price to buy bulk. Macadamias are a great source of Vitamin E, and are very low in carb, they are one of the best nuts out there 😉
