Summer Vegetable Skewers with Coconut Peanut Dipping Sauce

With the long weekend ahead our BBQ meal is now complete with these summer vegetable skewers with coconut peanut dipping sauce. Over the past week we've shared dishes to make your weekend go with a swing, all featuring our favourite Blackberries! Vegetables

8 large brown mushrooms

8 radishes

2 pointed red peppers

1 medium sized courgette

 

Marinade 

2 Tbsp avocado oil

2 Tbsp coconut aminos

½ tsp ground cumin (or cumin seed)

Freshly ground pepper

¼ tsp pink salt

Juice of ½ a lime

 

Dipping Sauce 

1/3 cup of peanut butter

1 Tbsp toasted coconut

1/3 cup of coconut kefir (or coconut milk/yoghurt)

Juice of ½ a lime

Salt and cracked pepper to taste

1 tsp manuka honey

To make your skewers 

Soak the wooden skewers for 30 mins before using if possible (this avoids them burning in the oven or on the BBQ).


Meanwhile, in a large bowl mix together your marinade ingredients.


Cut your peppers into 8 long fat strips. Take your courgette and cut into rounds (if it is quite chunky, cut these in half again). Place your pepper strips, whole radishes and courgette chunks into the marinade and set to the side to marinate for about 15 minutes minimum.

 

On each skewer thread a mushroom, a long piece of pepper, a chunk of courgette, topped with a radish. Set on a tray and drizzle over the marinade, set to the side until ready to cook.

 

If cooking in the oven, cook at 180 for 25-30 mins.

 

To make the dipping sauce 

Mix together all the ingredients in a small bowl. Season as needed.
