Ingredients
Base
x 1 bag Cacao or Vanilla, Coconut Bites
x 1 bag each of Banana and Jackfruit pieces from Kooky
3 Tbsp Nutcessity Almond Butter
½ cup Sunflower Seeds
1-2 Tbsp Water
Cheesecake
300g Strawberries
Juice of ½ fresh Lime
180g Cacao Butter
½ cup Almond Milk
⅓ cup Nutcessity Cashew Butter
40g Pulsin Vanilla Keto Protein Powder
Opt - Freeze dried Strawberry
Method
Base
Place all dry ingredients into a processor, blitz to a fine crumb.
Add in the wet ingredients and pulse until it starts to stick together when pressed.
Add in a little more water if needed.
Cheesecake
Place all ingredients in a blender and blend until smooth.
Add a little freeze dried strawberry powder/pieces in to gain richness of colour and flavour.
Press base into a small cake/loaf tin or individual muffin moulds (makes 12).
Pour over the cheesecake filling.
Decroate and place in fridge or freezer to set.
Enjoy.
Substitutes
Protein powder – Replace with ½ tsp vanilla extract or paste and a 2 Tbsp of maple syrup or raw honey. Banana and jackfruit pieces – Replace with medjool dates or dried apricots.
