Looking for an accompaniment to your main meat dish, or vegan alternative at Christmas. OR something to pimp up your greek yoghurt in the morning or custard for pudding! 

This recipe is sure to please all ages. Can be made in advance and stored in your fridge for up to a week.

400g pitted cherries (I used frozen)

Juice of 1 orange

1/2 orange sliced

1 large sprig rosemary

4 Tbsp apple balsamic vinegar (I used Willy's apple balsamic)

Place all the ingredients in a small saucepan. 


Bring to a simmer over medium heat. Turn down the heat and simmer for 30-60 minutes (until cooked through and reduced). There should be some liquid left, but it will slightly thicker. 


Store in a glass jar in the fridge until required, or enjoy straight away. When storing in the fridge, store with the orange and rosemary sprig in if desired for greater depth of flavour, remove before serving.


Serving Suggestions - Delicious with white meat such as chicken or turkey. Also great with lamb. For a vegan option, try with roasted cauliflower. This is also delicious with thick greek yoghurt (i love the coconut yoghurt by CoCo's or Nush almond milk yoghurt), and a winner with the children is served with custard!
