Golden Turmeric Milk

Cashew nuts are a great source of magnesium so this is a perfect drink to have in the evening. Turmeric is renowned for being anti-inflammatory, and something we should incorporate into our diet as often as possible. Ginger is perfect for aiding digestion and cinnamon balances blood sugar. Bee pollen is a great way to add a little sweetness without adding a sweetener as well as providing a great source of vitamins and  minerals and can help to support a good immune system. If desired you can add in a medjool date to the blending for a sweeter option (perfect in the evening after dinner, before bed, or anytime!) This one is great for the immune system too.

Ingredients

100g cashew nuts

8cm (approx.) stick of fresh turmeric

2cm (approx.) piece of fresh ginger

One cinnamon stick

1 Tbsp bee pollen

Fresh water

 

Place the cashew nuts in a glass bowl or jar and cover with water. Soak for 2-4 hrs (you could do this overnight and leave them in the fridge too) Drain off the soaking water and add the cashew nuts to a blender. Add in roughly chopped turmeric, ginger, the cinnamon stick and bee pollen grains. Add in 1.2 litres of fresh water (add in only 1 litre if you would like it to be a richer milk) Blend well, depending on your blender this may take 30 seconds to a couple of minutes. Strain through a nut milk cloth or a piece of muslin. Makes approx. 1 litre of delicious milk.
