Raspberry and Chocolate Chia Seed Pudding

2 portions Servings

5 mins to prep and at least 15 mins to overnight in the fridge.

easy

The pudding you can have anytime! Really, have it for breakfast, as a snack, or as a pudding! It's packed full of nourishing ingredients, including being protein and fibre packed thanks to the Chia Seeds, perfect to keep you feeling full for longer. We love to make these and keep them in the fridge for when hunger pangs strike.

Ingredients

2 tbsp Chia Seeds

1 cup of coconut or almond milk

Pinch of Cinnamon

Berries

Dark Chocolate to grate (we love Green & Blacks)

Nourish Bites

Mix all ingredients together well and leave for 4-5 mins and then mix again as the seeds start to swell. If the Chia Seeds are still settling to the bottom then leave a couple more minutes and mix again.

Place in the fridge overnight, or leave for at least 10 mins longer if you're eating it straight away. Top with nut butter (I love making pecan, macadamia and almond butter to go with this), fresh berries, sprouted seeds or nuts and a few Nourish Cacao Bites!

You could also top with a dollop of probiotic yogurt, or kefir.

Note - If you'd like this to be sweeter or just to mix it up, add in a chopped dried fig or apricot, or 1/2 tsp of raw honey when making it.
