Our Loaded Pumpkin Soup is the perfect autumn warmer for this weekend with some windy old weather forecast! With clock changes, Halloween and a few fireworks thrown in it's the time for a big warming bowl of something nutritious and delicious! Perfect to have warming on the stove ready to warm up chilly hands, and a great way to enjoy our Turmeric Bites too. 

Ingredients

One small pumpkin, peeled and deseeded (keep seeds to roast) and cubed.
1 litre of your stock of choice (we love Ossa Organic Chicken Bone Broth, or Just Spices Vegan stock)
2 tbsp Coconut Butter
Sprig of Rosemary
3 cloves of Garlic
Salt and Pepper to taste
Pinch of fresh Coriander to decorate
Handful of Turmeric Bites
Extra stock, coconut milk, or water to thin down if needed.

Place all ingredients, except seasonings and coconut butter, into a pot. Simmer until soft and remove from heat. Cool slightly and blend until smooth along with seasonings and coconut butter. Thin with extra stock, coconut milk, or water to reach your desired consistency (coconut milk will give this a creamy texture). Top with crumbled Turmeric Bites and toasted Pumpkin Seeds and/or Cashew Nuts and chopped Corriander.
