Our Loaded Pumpkin Soup is the perfect autumn warmer for this weekend with some windy old weather forecast! With clock changes, Halloween and a few fireworks thrown in it's the time for a big warming bowl of something nutritious and delicious! Perfect to have warming on the stove ready to warm up chilly hands. 

Ingredients

 

1 pumpkin - seeded (and skinned)

1 carrot

2 stalks of celery

3 cloves garlic - peeled

1-2 stems of fresh rosemary

1 tsp ground cumin

1/2 tsp ground cinnamon

1 tsp coriander seeds

2 Tbsp coconut butter (opt.)

Salt and Pepper to taste

1 litre of bone/vege broth.

To serve - 1/2 cup pumpkin seeds or cashew nuts

Place all ingredients, except the coconut butter, into a pot. Simmer until soft and remove from heat, remove the woody part of the rosemary stalk. Cool slightly and blend until smooth along with seasonings and coconut butter.


Thin with extra stock, coconut milk, or water to reach your desired consistency (coconut milk will give this a creamy texture). Top with toasted Pumpkin Seeds and/or Cashew Nuts.
