Navneeta from lets_eat_well_together created this super Knickerbocker Glory using our Strawberry & Choc Mousse Bars and we had to share it to celebrate one of our favourite months, Ice Cream month! Super simple to create, but packed full of nourishing ingredients we know you'll love it! Navneeta likes to whip up a batch and keep it in the freezer for those hot days when only something chilled and delicious will do!

Brazil nut butter from KAPE FOODS, half a pot. Full of selenium to support the thyroid and and helps boost the immune system!!

1 tbsp vanilla extract

2/4 espresso shots. I am using organic decaf pods from CruKafe

4 tubs cream cheese from NUSH

1/2tbsp @ossaorganic collagen for gut healing and of course skin health! 

Mix all the ingredients together. The key here is to get air into the mixture before freezing! 


I have made plenty here to have a couple of pots in the freezer to use for puddings and affogatos! I have used decaf here just in case my kids would like a little try as well as allowing me to plop a big dollop of ice cream into my fat coffee in the morning
