Easter Nests with Strawberry Bites 🍓🐣

We’ve been having some fun in the kitchen… and these Easter Nests might be one of our cutest creations yet.

You could fill them with Easter eggs. We have packed ours with our Strawberry Bites for that juicy pop of flavour and colour - hello spring vibes 🌸✨

Sweet, crunchy, and seriously moreish… don’t be surprised if they disappear fast.

150g Dark Chocolate (Ideally over 70%)

1/4 cup Peanut Butter (I used crunchy)

1 1/2 cups Granola (I used Paleo Foods)

1/2 cup Flaked Almonds

  1. Melt your chocolate over a double boiler (or over very low heat, stirring regularly).
  2. Add to the melted chocolate your peanut butter. Mix well.
  3. Add in the granola and flaked almonds. Mix together until all coated.
  4. Take a muffin tray and line with your cupcake/muffin cases (use less if you would like fuller birds nests). Spoon the mixture evenly between the cases. Using a tsp press it gently into the case. I used a tamper to make a well in the middle, but you can use a tsp/measuring spoon to achieve the same. It can be helpful to put a little coconut oil (or make it damp) to help the mix from sticking to your spoon.
  5. Place into the fridge to harden.

To serve - Fill with strawberry bites, easter eggs and any other treats you like.

NOTE - You can also replace the granola with 1/3 cup each of coconut, buckwheat or puffed rice, sunflower seeds, currants and cashew nuts. Or make them using cornflakes.
