Chocolate Cherry Hazelnut Mousse

With Cherry Day this week it's time to indulge in the season of this gorgeous fruit with our Chocolate Cherry Hazelnut Mousse. Simple to put together, this is a time saving dessert that looks, and tastes delicious.

There is nothing quite like that first cherry of the season, it's lively flavour is one that we often long for through the winter. Packed full of wonderful nutritional benefits too it is a truly, tiny, but, super fruit, they can help reduce inflammation and may help with improving sleep, boosting heart health and speeding recovery after exercise. 

100g cashew nuts

50g pitted Medjool dates

20g (2 tbsp) cacao powder

75g soft coconut oil

2/3 - 1 cup water (use less if you like a thick mousse)

Optional – vanilla extract ½ tsp

 

To layer


Fresh cherries

Toasted hazelnuts

Orange zest (opt)

Place all ingredients in a powerful blender and blitz until smooth.

 

Layer in glasses or bowls with your fresh cherries, hazelnuts and finish by topping for a little orange zest. Place in fridge to set.

NOTES

Make it fancy – add a little port (1-2 tbsp – replace some of the water with this) into the mousse while making it, mmmmm.

I often use warm boiled water, as it fully melts the coconut oil then, but if your oil is melted then use cold water.
