This chocolate cake is our go-to for birthday cakes or celebrations. It makes a very large, high cake. It is super easy to impress with and minimal effort, as all the ingredients go into your food processor. It also freezes well and can be used to whip up a batch of muffins too.

Makes 20 slices, or less if you're all hungry!

70g gluten-free self raising flour

250g coconut sugar

100g cacao powder

160g ground almonds

2 tsp bicarbonate of soda

150g coconut oil (soft)

4 eggs

60g tahini (optional)

250ml coconut milk

200g boiling hot, fresh coffee

60g maple syrup

1/2 tsp vanilla paste or 1 tsp vanilla extract

Preheat the oven to 170 degrees Celsius.

Mix all the ingredients together in a mixer or food processor. Ensure no lumps remain.

Bake in 2 small, lined cake tins for about 40 - 45 minutes, or in one larger, lined cake tin for longer.

Once the skewer comes out clean, remove from oven and allow to cool on the rack.
