From the kitchen of the lovely Claudine of Healthy Family Food Ideas this is a recipe for this weekend for sure!
Healthy Bounty Bars Pots! This dairy-free, no-cook treat is made-in-minutes yet so delicious, creamy and smooth! It is full of probiotic bacteria (from the live kefir), nutritious hemp (but no one will know it’s in there), healthy fat (the coconut) and very low sugar!
Bounty bars normally have have 9 tsp of sugar and emulsifiers in them but this recipe is rich in fibre, vitamins C, E, B1, B3, B5 and B6 and a great source of essential minerals such as iron, manganese, copper, magnesium. Inspired by Healthy Bounty Bar ice-cream I created last summer, but as the weather is so bad still, I transformed them into a dessert!

Makes 4 pots 

 

75g dark chocolate

40g ghee (or butter or coconut oil)

 

270g pure coconut kefir yoghurt

70g desiccated coconut

2 tbsp hemp hearts (optional) 

45g coconut butter, melted/softened*

1.5 tbsp good quality vanilla paste 

2 tbsp raw manuka honey or maple syrup 

Mix together all ingredients in bold.

Pour the mixture into 4 glasses. 

Next melt (in the microwave in 30 second blasts, on low, stirring a few times) in a small bowl the chocolate and ghee/butter or coconut oil.

 

Top the pots with the chocolate mixture. Sprinkle with extra desiccated coconut.

Eat immediately or chill until you want to eat them (the chocolate will set but it’s fine to break it up with a spoon) 

*you can leave this out if you like but it is easy to find in supermarkets. Message me if you’re unsure what it is and I can send you a screen shot of what I buy. You can leave it out though and you just get a runnier rather than rich/thick texture but it’s still nice!
