Watermelon Pizza – Such a fun thing to make with kids, stack it high with fruit and enjoy!
If you’re searching for summer holiday activities to enjoy with the little ones then look no further. Make it educational too by naming all your fruits and how they grow ( did you know that watermelon grows on a vine for instance?) and whether you are cutting them into 1/2’s, 1/4’s and so on. Then once you’ve sliced up some fruit, pop them in bowls and let them stack them high with their favourites! We love some of our mini raspberry coconut crunch macaroons on top too, try them here.
One ripe Watermelon
Thick Yogurt (I like to use CoYo
Coconut Yoghurt, or a good, thick Greek yoghurt)
Selection of Berries, such as blueberries, strawberries, raspberries
Kiwi Fruit – sliced into thin slices
Banana – sliced
Pecan Nuts, Walnuts or Pistachios
Honey/Maple Syrup or Coconut Nectar
Cut your watermelon in half, then slice into thick slices (about 1.5-2cm)
Spread the yoghurt over the red part of the watermelon flesh. It is really important that the yoghurt is thick. If not, it will run very quickly once sitting on the watermelon for a while. If your yoghurt is not thick, you can pour it into a muslin cloth and allow to drain for a little while, this will remove the whey/water and thicken the yoghurt into a ‘labne’ which is thicker. Alternatively, you could use ricotta or cream cheese or diary-free alternative.
Decorate as desired with your option of toppings. Drizzle with honey, maple syrup or coconut nectar if desired. You could also grate dark chocolate over the top as well. The options are endless.
Serve immediately. Enjoy.
