Delicious and warming chai tea – this can be made in advance and then reheated when needed.

Ingredients for Warming Chai Tea:

2 1/2 cups fresh almond milk
1 cinnamon stick (snapped in half)
1/4 tsp ground cinnamon
1/2 tsp coriander seeds
Good pinch ground nutmeg
3 whole cloves
4 cardamon pods (lightly crushed)
4 whole allspice berries
1 whole star anise
2 large slices fresh ginger
1 slice of fresh tumeric (or a pinch of ground tumeric)
small pinch ground black pepper


Place all ingredients into a small saucepan, heat gently until hot (jut before boiling). Remove from heat and allow to steep for at least 30 minutes (if time allows) or overnight if desired. Prior to serving, heat gently and then sieve and pour into cups. I use 1/2-1tsp heaped raw honey per cup, but you can omit this if desired or use an alternative sweetener.

At Christmas time, this is delicious with a large slice of our Christmas Cake or a Ginger Biscuit.
