Smashed pea and avocado, green goodness on a plate

Pea and avocado smash from Nourish

This recipe is a favourite of mine and great to use for dinner parties, or alongside your favourite vegan or meat main. It goes well with falafel, lamb and salmon. Or you can have it by itself. Enjoy.

Ingredients 

3 cups frozen peas

80-100g spinach leaves

½ avocado

Squeeze of lemon juice

70gm feta (optional – leave out if vegan, or add in 1 tsp savoury yeast if desired)

Salt and Cracked Pepper

 Method

  1. Bring a pot of water in a medium saucepan to the boil. Once boiling, tip in your peas and remove from the heat. Allow to cook through for 3-4 minutes.
  2. Tip your peas, along with the spinach leaves, avocado, lemon juice, feta or savoury yeast if using and blitz until it becomes a consistency you like. Stop and season part way through with salt and cracked pepper. If your mixture if quite dry, you can add in 1-2 Tbsp cold-pressed olive oil or extra avocado. But I usually find I don’t need to.
  3. Enjoy 😊

 

NOTE – You could add in a small handful of basil leaves or a couple of mint leaves (finely chopped), this is really delicious. Make it match what else you are serving with it.
