Quick Seed Bread

Sometimes you need to eat something on the go that will keep you fuelled up all day long, our quick seed bread is just that. Slather it with our classic houmous or ABC nut butter  and pop it in a lunchbox to help when hunger strikes.  there are SO many good reasons why you should be eating more seeds.  Seeds are naturally crammed with real goodies like protein, iron, fibre, vitamins and minerals which makes them a super nutritious food for a healthy diet. The rich nutrient content of seeds makes them particularly good for those leading an active lifestyle.

Ingredients 

1 cup sunflower seeds
1 cup pumpkin seeds
½ cup flax seeds
½ cup whole almonds
4 tbsp coconut flour
4 tbsp psyllium husks
2 tbsp chia seeds
½ tsp Himalayan salt
2 tbsp maple syrup
3 tbsp coconut oil (melted)
1 ½ cups water
1 large ripe banana or 2 smaller bananas, peeled and mashed

Method

Line two loaf tins, or one very large loaf tin.

Combine all dry ingredients together in a medium size bowl.

Whisk together the maple syrup, mashed banana, melted coconut oil and water.

Add the wet ingredients to the dry ingredients and mix well.

Divide the mixture between your tins if using two and press in firmly.
Leave on bench for 2 hours +.

Preheat the oven to 175C, bake for 20 minutes.

Remove from the oven, turn out from the tins and place on a tray. Bake for a further 30-40 minutes. Remove and allow to cool on a cooling rack.

Store in an airtight container for up to a week (in hot weather, keep in fridge if not using within a couple of days). Can also be sliced and frozen.

ENJOY!

Variation – Grate in 1 apple and add 1/3 cup of currants/sultanas/raisins and 1 tsp of cinnamon. Delicious!!!!
