Winter Kale, Cranberry and Pecan Salad

With the Kale season coming to an end soon we're enjoying it while we can, and this is Ineke's families favourite way of enjoying it. A wonderful way of showing your insides a little love, and the pecans, apple and cranberries in this really add a lovely flavour.

 

 

250g pack of kale

4 tbsp extra virgin cold pressed olive oil (Hunter and Gather do a great one!)

1 tbsp Apple Cider Vinegar (love using Willy’s ACV for this)

1 tbsp Coconut Aminos

Pinch of sea salt or pink salt

1/3 cup pecan nuts

¼ cup cranberries (I use these ones HERE that have no seed oils or sugar added)

¼ cup pumpkin seeds

1/3 cup broccoli sprouts

½-1 apple finely sliced (Optional)

  1. Remove the stems from your kale, and discard. Bunch your leaves of kale into tight handfuls and cut with a sharp knife so you get smaller pieces of kale.

  2. Place the kale in a bowl along with the olive oil, vinegar and aminos and a pinch of salt. With your hands massage your kale until it starts to soften (it should be easy to chew, this is the idea behind massaging it)

  3. Add in your pecan nuts, cranberries and pumpkin seeds along with apple slices if using. Mix together well. Season with black pepper if desired.

  4. Serve alongside a half or whole avocado, and/or with your favourite protein choice such as some grilled chicken breast.

 

Enjoy!

 

Note – 1 Tbsp Coconut Aminos could be replaced for ½ tbsp honey or maple syrup and a little extra apple cider vinegar.
