We've reinvented our favourite Keto Buns and created delicious, nutritious, Keto Hot Cross Buns! Ineke made these on her holidays in Italy this week, which shows just how simple they are to put together with the lack of home equipment in their holiday house! The perfect way to enjoy this traditional Easter treat, but keep to your clean Keto lifestyle.

1 & 1/2 cups almond flour 

1/4 cup coconut flour 

1/4 cup psyllium husk 

2 tsp baking powder 

1/3 sultanas or currants 

1 tsp cinnamon 

good pinch of salt 

½ tsp of mixed spice if desired

1 heaped tsp of maple syrup, or honey (optional) 

zest of 1 orange 

2 tsp apple cider vinegar (we love Willys ACV)

1 tbsp oil of choice (we used olive)

250-300g of hot water

Preheat the oven to 160C. In a large bowl mix together all the dry ingredients and then add the orange zest and currants, mix again. 

 

Next add the oil, honey, vinegar and hot water. 

 

Mix well until you have a dough consistency. 

 

Shape into buns and place on a hot baking tray or a stone. (You can use lightly damp hands to shape if easier to stop the dough from sticking to your hands). 

 

Bake for 55-60 minutes.

 

Remove from the oven and allow to cool before drizzling with melted dark chocolate to create your cross.
