These Almond and Matcha Cookies are a delightful way to add a little Matcha to your day, or to serve alongside your daily cup. We're big Matcha fans here at Nourish for all of it's many health and wellbeing benefits, even the ritual of making it is an exercise in slowing down for a moment. We love the Organic Matcha from our friends at OMGTEA, it is, as they say, 'the Champagne of Matcha!'

160g ground almonds (1 packed cup)

1/3 cup sunflower seeds

½ tsp baking soda

½ desiccated coconut (I used fine grade)

1 Tbsp matcha powder (I used OMG Tea)

½ cup truvia brown sugar (this is a keto/low carb version, can replace with coconut sugar)

1 tsp ground cinnamon

½ tsp ground ginger (opt.)

1 large egg

100gm soft coconut oil

Preheat the oven to 170 (fan oven).

 

Mix together in a bowl all the dry ingredients.

Add in the egg and the coconut oil and mix together well, using fingers to mix well if needed.

 

Form into 9 large balls and place on a non-stick baking sheet. Bake for 16-18 minutes until just browned at the edges.

 

Remove from the oven and allow to cool.
